Decemburrrrrrrrr

I know, the title has gotten old... but this is my recipe blog, and I like it.

Breakfasts:

Ham and Egg cups with Green Smoothies
Crock Pot Breakfast Casserole (honestly, I am doing this as a trial run for later- not strict paleo)
Scrambled Eggs and Green Smoothies
Baked Oatmeal (not paleo, but fun- we use coconut sugar)

Lunches:

Mostly will be leftovers. I am mean like that...

Dinners:

Vegan Split Pea Soup (sans barley)
Crock Pot Curry
Sweet Pepper Kale Toss (this is not paleo, but is Kurt's favorite thing)
Taco Night

Cranberry Pecan Bread

Cranberry Pecan Bread
This recipe yields 1 full size loaf pan.
3/4 cup coconut flour
1 teaspoon baking powder
1/2 teaspoon salt
8 eggs
1/2 cup olive oil
1/2 cup agave
1 teaspoon vanilla
1 teaspoon lemon rind
1 cup fresh cranberries
3/4 cup pecans
Mix flour, baking powder, salt.
Add oil, agave, eggs, vanilla and lemon rind.
Mix well.
Fold in cranberries and nuts.
Pour into loaf pan (I line with baking paper)
Bake at 350 for approximately 1 hour.
Cool before slicing.
Enjoy

Cube Steak, Eggs, and Potato with Veggies

Zero Excuses

School is over.  No more excuses.

We have a cute little family-owned grocery store here in town. We opened up an account there- and if you prepay $100 you get 10% off everything, every day. So, I have been doing that. Not just because I love supporting small business, I also love being able to walk to the grocery store. There is something to be said for that, you know? Kurt commutes a lot, so he is able to pick up any weird items I might need that our tiny store doesn't carry- so I more made this for his grocery trip than for me.... if that makes sense...

Here is the menu for the week!!! Funny story... I have not cooked with beef- AT ALL- since we moved. And all of a sudden it is in the menu this week. Weird, right???

Slow Cooker Taco Soup (I will be modifying this)
Burgers and fries! (Because it is getting warmer- and these are sure to please!)
Pizza (because it is delicious... seriously...)
Spaghetti Night!!! Zucchini noodles, with bulk-Italian sausage meatballs.
Orange Sriracha Chicken and steamed broccoli, served over cauliflower rice.
Apple Cinnamon Muffins!
Breakfast Sandwiches! 
Lemon Raspberry Pancakes
Meat-Crust Quiche 
Rutabega Egg Nests
Prosciutto Egg wraps and fresh fruit (for lunch)
Hard boiled eggs and sausages (for lunch)
Salad with honey mustard vinaigrette

This week's recipes, all in one spot!

I am tired of print-outs and searching, so here is the menu plan for this week. This menu is much different than previous menus for a few reasons. First of all, I am trying really hard to get back into my paleo (or at very least, whole foods) groove! Secondly, Breakfast is now the only meal we are guaranteed to share as a family, so breakfasts will be more elaborate on most days, and lunches and dinners will be simpler.


BREAKFASTS:

Caramelized Plantain Pancakes with Sweet Cinnamon Plantain Maple Syrup

Lemon Raspberry Pancakes

Bacon and Eggs
Ham and Eggs

LUNCHES/DINNERS:
Lunches and dinners are interchangeable most days. Good for me if I get the urge to be in the kitchen earlier in the day!
Honey Apricot Pork Chops with steamed veggies (or maybe baked asparagus?)
SLOW COOKER (caps for my benefit) Chicken Adobo 
Green Smoothies - add greens, add fruits, blend. Done.
Hard boiled eggs and sliced veggies
Lunch wraps of meats and avocado, served with fruits and veggies

A week on a shoestring.

This week we are on a shoestring budget, and here is what I have planned:

Breakfasts will be mostly eggs or sausages, served with homemade applesauce or fresh fruit, and some OJ
Lunches will be mostly leftovers from the previous evening's dinner, or perhaps a tossed together soup.

Dinners this week:

Sriracha Tacos! Putting this over tortilla chips (not paleo) and keeping the dressing (SO not paleo).
Crockpot Beef Roast (not using the soup mix- adding this instead)
Spicy Paleo Drumsticks 
Sriracha Chicken with celery and blue cheese
Chicken Taco Soup
