Febuuuuuuurary
Breakfasts:
Huevos Rancheros and juice! (I have a juicer! LOVE it! The kids pick what goes into their juices, and it is a win-win!)
Apple Muffins and scrambled eggs
Veggie eggs! I make these but do not put them in tortillas. We just have the veggie-eggs!
"Cereal!" We cut up fresh fruit of choice, and top it with some unsweetened shredded coconut and a few shakes of some slivered almonds and then pour on a little coconut milk. It is fast, and something about the crunch and milk gives the impression of cereal- without it having all that junk that comes with cereals!
Baked Oatmeal- not paleo, but a family favorite!
Lunch:
Alaskan Salmon Salad
Leftover Chicken and sun-dried tomato dressing salad
Leftover beef stew over kale
Dinners:
Spice Rubbed chicken and salad
Red Curry Beef Stew over kale
Salmon cakes over cabbage
Steak Skewers and pear salad
Breaded baked chicken and veggies
Pecan-crusted chicken and salad
Meatloaf and steamed veggies with potatoes

T'was the week after Christmas...
Carrying our Christmas celebrations into the next week has been something we have done for a few years. It really helps the kids (and admittedly, the adults too) transition from the Christmas-high back to normal routines much easier.
Continued Christmas music, movies, cocoa, and games- we find comfort in one another's company. Work and homeschool get done, cooking and cleaning too, but at a slower pace. It is as if it takes about a week for us to really reflect on the magic of Christmas and allow it to settle back deep in our hearts. (I find it helps me fight the post-Christmas blues, too.)
Menu for Christmas Week:

- Breakfast Casserole (this is awesome for Saturday mornings- when Kurt and I are feeling lazy, and just want to lounge in our jammies for a little while longer!) This tastes a LOT better if the potatoes are all added first, and not mingled with the other layers. Yes, much much much better!!! (This has white potatoes and cheese- not fully paleo)
- Baked Oatmeal (This is our daughter's favorite food. We use coconut sugar. This is not paleo.)
- Scrambled eggs and green smoothies (I love how the body just CRAVES green smoothies! We have been doing ours with OJ, a mix of greens, blueberries, and whatever else we have laying around!)
Lunches:
- Leftovers, mostly. Honestly, they are just easier... haha!
- Roasted Chicken and Veggies
- Ham rolls and sliced fruits and veggies
- Hardboiled eggs and fruits and veggies
Dinners:
- Chicken Curry and cauliflower rice (red curry sauteed with veggies and chicken, then simmered in coconut milk and tomato sauce)
- Chicken Soup (homemade stock, simmer with veggies)
- Crabmeat Stuffed Avocados (I think I will serve these on beds of shredded cabbage- so the kids can smash it all together- the like doing stuff like that.)
- Pumpkin Soup and Kurt's favorite salad (we have to modify it to be gluten free- but essentially I toss together the salad, and just serve this with crumbled goat cheese. Kurt LOVES THIS. I have to double the recipe- and we have never had leftovers!)
- White Chicken Chili- a friend's recipe. Make this in the crockpot on Saturday so there is soup to reheat on Sunday after Church.
- Wild-Salmon Salad (what's with all the seafood and salad this week?)
